Hi there! I’m Jamie, a 34-year-old self-taught pastry chef living in Asheville, North Carolina. I may have grown up in the U.S., but my sweet tooth speaks fluent Italian—and I’ve made it my mission to prove that gluten-free desserts can be just as rich, joyful, and crave-worthy as any traditional treat.
My journey into the kitchen started unexpectedly in my early twenties when I was diagnosed with celiac disease. I’ll be honest—it hit hard. Suddenly, the desserts I loved, the ones that felt like little celebrations, were off-limits. But instead of settling for dry cookies and sad cakes, I rolled up my sleeves and got to work reinventing dessert from the ground up.
I became obsessed—in a good way—with alternative flours. Almond, rice, sorghum, buckwheat… my pantry looked like a science experiment. I had flops (many flops!), like sunken cupcakes and biscotti that could crack a tooth, but each failure was just a stepping stone toward a better, tastier version of what I’d always loved.
These days, I focus on developing gluten-free dessert recipes that are truly meant for home kitchens. You won’t need fancy equipment or rare ingredients—just a little time, a little patience, and a lot of love. I especially enjoy giving classic Italian sweets a gluten-free makeover: think tiramisu, amaretti, panna cotta, and almond biscotti, all made safe and delicious for everyone at the table.
What brings me the most joy is hearing from people who’ve tried my recipes and felt like they finally didn’t have to compromise. Whether it’s a kid with food sensitivities lighting up at their first birthday cake, or a parent baking something everyone can enjoy together, that’s the kind of magic I live for.
